Ingredients

  • 2 cups warm water
  • 1 tablespoon yeast
  • 3 tablespoons honey
  • 2 tablespoons oil (whatever you have on hand)
  • 1 teaspoon salt
  • 6-7 cups all purpose flour

Instructions

With a mixer
  1. Add water and yeast to a warmed mixing bowl. Stirring to dissolve.
  2. Add honey, oil, salt and 2 cups of flour to the mixing bowl.
  3. Mix on a low setting on your mixer for a few minutes, until combined. I use the dough hook of my mixer for the whole process.
  4. Mix in remaining flour, 1/2 cup at a time, ensuring that the dough does not become too thick. Once the dough is cleaning the sides of the bowl you are ready to knead.
  5. Knead the dough using the specific instructions from your mixer. You should knead the dough for about 10 minutes, until it is elastic and smooth.
  6. Cover dough and let rise for one hour. Sometimes I use the mixing bowl of my KitchenAid for this step to save on dishes.
  7. Once the dough has doubled in size, punch the ball down and shape into two loaves. Place the two loaves in parchment lined loaf pans for the second and final rise.
  8. After the loaves have doubled in size, bake at 350 degrees fahrenheit for approximately 30 minutes until they are slightly brown on top.
  9. Remove bread from pans and cool on a wire rack away from little fingers who will come in droves from the lovely smell.
